Abstract: 艾草为我国传统中药材,广泛应用于医药和食品领域.艾草含有挥发油、黄酮、三萜、酚类、多糖等多种化学成分.艾草散发特殊的香气,主要是因为含有丰富的挥发油;黄酮类成分主要为黄酮和黄酮醇;三萜类成分结构类型多样,多数为四环三萜和五环三萜;多糖类成分主要是酸性多糖.此外,还含有少量的酚类及微量元素.本文对艾草的主要活性成分及其提取工艺进行了综述,以期能够为更加合理有效地利用艾草提供参考.
