Abstract: <正> 资料之一谷氨酸发酵液用过滤法提取时约有15%谷氨酸损耗。本法可不经预先过滤,也不要加助滤剂。锌盐与谷氨酸之克分子比为1:1~1.5:1,以1.1:1为好。向发酵液添加锌盐及校正PH值时要进行搅拌,但不能引起谷氨酸锌受到剪应力或致破碎,即搅拌速度要慢。
