Abstract: 1.坊间说法:豆浆一般在做好后2~3小时之内喝最有营养,之后豆浆的营养就会逐渐分解,喝了容易让人腹胀腹泻.所以,豆浆要喝现磨的. 专家说法:目前,没有任何证据能说明豆浆中的营养物质会在2~3小时后分解.豆浆中的糖类不会变成其他物质,钙、铁、维生素等在合理保存条件下是不会分解的.至于蛋白质和脂肪,除非变质才会导致腹胀、腹泻,这是食物保存安全的问题,不是分解的问题.如果是自家鲜磨的豆浆,隔夜的话应该放置冰箱低温保存,再饮用时应重新煮开.
