Abstract: <正>发芽马铃薯中毒马铃薯俗称土豆,当马铃薯发芽时,其芽中毒素含量较高。马铃薯毒素对胃肠道黏膜有刺激性,食后几十分钟到几小时便出现不适,表现有口腔和咽部烧灼感,继而出现恶心、呕吐、腹泻,严重呕吐可引起脱水、酸碱平衡紊乱、血压下降。马铃薯毒素还能抑制中枢神经系统,尤其是呼吸中枢。中毒严重者,可有体温升高、抽搐、昏迷、呼吸困难等症状,甚至出现呼吸麻痹。因此,应避免食入发芽马铃薯。
