Optimization of the Fermentation Conditions of Nisin High-yield Strains

Abstract: 研究了乳酸链球菌(Lactococcus lactis subsp lactis 1.2281)发酵合成乳链菌肽的最佳条件.在此基础上,采用琼脂扩散法检测乳链菌肽产量,用二剂量法计算效价,发现菌株生长量与乳链菌肽产量接近同步;通气量对菌体生长及乳链菌肽合成影响不大;发酵温度为30 ℃,初始pH值为6.5时发酵液效价最高;用1%蔗糖作为碳源,2%蛋白胨+1%酵母浸粉作为氮源最佳.
